Vegetarian Banh Mi

I don’t generally browse Pinterest. I use it as my big old bulletin board because I like pretty pictures and it’s easier than saving links. I find recipes through food blogs I follow, posts about what other people are making, and Google if I want something specific. I also like to look at pinboards of friends (as opposed to browsing the wilds of Pinterest) because my friends generally have pretty good taste. But how (HOW) did it take me SO LONG to look at Erica’s boards?? What was I thinking? Look at this beauty.

When I logged onto Pinterest to look at my boards and meal plan for the week, Erica had just pinned this Banh Mi recipe and on the list it went. It was a nice way to extra-fancify egg sandwiches for slacker cooking night. They were delicious and different from anything we usually have. I especially enjoyed the peeled strips of cucumber.

Slow Cooker Roast Beef Sandwiches

These. were. amazing. Everyone loved them and I’m definitely making again. Thomas made a stir-fry with the leftover beef (over which he’s poured the au jus sauce), some leftover rice, and bell peppers. The sauce made it fantastic. I might need to mix up that sauce and call it my ‘secret ingredient’ for all sorts of things. (Secret ingredient = a massive amount of salt.)

Crock Pot Ranch Chicken Tacos

Disappointingly, these didn’t taste like ranch. They were still really, really good (Thomas: “can you make these again next week?”), but I’m going to try adding more seasoning next time.
