What We Ate: Thai Beef Crockpot Curry, Easy Mexican Rice, Slow Cooker Chicken Burritos, Sweet Potato Chili


I’m wondering when I’ll get back to loving food again. Right now it’s more of an annoying time suck. I don’t hate it like in the first 20 weeks of pregnancy, but it seems ridiculous to have to do it three times a day. Every day! And the kids! They want to eat something like twelve times a day and I’d be lying if I said I didn’t ever lose it and yell “STOP ASKING FOR FOOD.” It would be fine (well, better) if they just ATE MEALS, but instead they want to eat every hour, on the hour, which is not how I want to spend my day.


go to link Rant aside, I’ve been wanting to get back to posting about what we’re eating (partially because I want all of YOU to do the same so I can get some inspiration!), but I just can’t seem to get excited about any of it. It’s food. Blah. But the best way to get going is to just do it, right? So here are some things we’ve tried lately:

We actually had this a few times during my ‘I don’t even like to think about food, let alone write about it’ phase. It’s easy, yummy, and tastes like you sprung for takeout without the takeout price. I love Janssen’s recipes.

Slow Cooker Chicken Burritos

This is what I needed the Mexican rice for – I didn’t want to buy it in the heat-and-serve bags.

This recipe made a TON of food. We had it for dinner, lunch the next day, dinner AGAIN, and the leftovers still lasted a whole week. I took to adding scrambled eggs and making breakfast burritos every morning. BIG ones. (Hey, I’m pregnant.) Luckily, it was pretty good, although I would have preferred it in a smaller batch. There’s only so many mornings (or evenings) I want to eat refried beans mixed with cream cheese, you know?

Sweet Potato Chili

Thomas LOVES sweet potatoes. I don’t hate them, but would probably never eat them if he wasn’t such a fan. I was hoping this would be more chili-like, but there was no getting around the fact it was a bowl full of sweet potatoes. He gives it two thumbs up (for both the sweet potatoes and the chili flavor) while I was willing to eat it, but wouldn’t go out of my way to have it again.

We probably will have it again, though, since the kids also love sweet potatoes and if a recipe is a hit with three out of four it’s good enough to put in the rotation.


  1. I feel like cooking is an annoying time suck pretty much all the time, and I am very NOT pregnant (knock on wood! jump up and down! ha). I do love a good crock pot recipe, though.

  2. I get so tired of endless cooking and dishes too. I don’t even make recipes anymore. It’s all survival.
