What We Ate: Beer Bread, Slow-cooker White Bean Soup, Slow-cooked Meatballs

Beer Bread

Beer bread + dip = Super Bowl, baby. Most beer bread recipes are essentially the same, so you can’t really go wrong, but this super-simple one is perfect (even though I use the smaller amount of butter). I made it again for Bunco night last week and was rather disappointed to come home with no leftovers.

Slow-cooker White Bean Soup

Make this. I don’t care if you think you’re not crazy about bean soup. (I’m not.) I don’t care if you don’t think your kids will eat bean soup. (I didn’t.) I understand if you’re skeptical about six cups of water and zero stock of any kind. (I was.)

This was the best. soup. ever.

Slow-cooked meatballs

Soooo, I didn’t actually do this. I just wasn’t up for raw meat at 9 am. I figured I could put it off until 11. Then maybe 1 if I cooked them on high. Or 2. Until finally it was 4 pm and I mixed them up and just put them in the oven (without onions). But! I followed the rest of the recipe exactly and they were delicious. The kids went nuts for them.
